Nestled in the heart of Montalbano country outside Ragusa, Eremo della Giubliana is a former monastery (‘eremo’ means ‘hermitage’) which has been turned into a smart hotel that still provides the warm hospitality of a family-run establishment – the Nifosi family’s elderly nonna can often be seen in the kitchen overseeing meal preparation. The 13 cosy former monks’ rooms retain their monastic charm, boasting artefacts, faded oriental rugs and enormous beds with crisp sheets – the hotel’s massive walls and dark shutters ensure sleep is undisturbed. Those seeking more privacy or space should opt for one of six suites or five cottages. Traditionally tiled bathrooms invite guests to bathe in the hotel’s orange-tinged, health giving waters. Downstairs is a charming relic-filled lounge, but the piece de resistance is a beautifully restored dining room with stone walls, timbered ceiling and central arch - a glorious setting for the ample continental breakfast or dinner cooked by renowned chef Don Eusebio. Explore the ancient necropolis and flower-filled courtyards or the pool set in a lush garden; there’s even a private runway from which guests can book air tours. A luxurious sanctuary in the Sicilian countryside.
