A former 19th century water factory near the site of an old convent, this ultra-modern hotel is a symphony of old and new. Reclaimed timber sits alongside slick black stone, the original façade still bears the factory name and rooms have chunky glass balconies and wet rooms clad in local onyx. The restaurant serves exquisite contemporary Mexican cuisine and is a big draw for the local glitterati.
