Perched on a hill overlooking Champillon, this former 19th-century coaching inn's recent renovation has resulted in a breathtaking contemporary wine retreat. Featuring a renowned Michelin-starred restaurant, the hotel's latest addition - a sleek spa with unspoiled views of the Champagne vineyards - has turned this exclusive resort into a sought-after destination. Architect Giovanni Pace redesigned the original structure of the 17th-century property to meet the needs of a modern hotel; the elegant rooms and suites were then dressed by the hotelier's own interior designers, who, inspired by the natural landscape surrounding the hotel, brought in natural accents in feature walls and fresh flowers. The Joséphine Apartment is a lesson in contemporary living, with beautifully appointed living space and a private terrace overlooking the Champagne hills.
