This achingly cool hotel and spa is housed in a beautifully restored 16th-century palazzo at the very top of the fascinating ‘white town’ of Ostuni. Interiors feature vaulted ceilings, bare stone walls, limestone floors and minimalist decoration in white and ecru throughout the public spaces and the nine bedrooms. For down time, there’s the spa, a small pool and a restaurant serving modern versions of local cuisine. Views from the various terraces and ramparts (well-supplied with white-cushioned sun loungers) are stunning.
