It was love at first sight when the Belgian owners stumbled across this old boarding school in Olargues back in 2015. In the summer of 2017, they opened a vegan restaurant and an art gallery, followed by the renovation and creation of six stylish, spacious and modern rooms and suites which opened in 2020, but it doesn’t stop there! Once the landscaping of their garden and vegetable garden had been created, they wrote a book on plant-based recipes and a small pool, open-air gym and petanque court have now been added. Take a dip in the river via the private steps and soak up the pretty views before enjoying an aperitif and the convivial atmosphere in the restaurant.

Whether you're lounging in the spacious rooms, enjoying local food, or exploring the stunning surroundings, this boutique hotel offers a retreat that is both relaxing and enriching.

For those interested in history and culture, the nearby town of Béziers provides an excellent day trip, with its impressive cathedral, bustling boulevards, and a rich tapestry of historical sites and Carcassonne, a little further away, should be on your must visit list. Wine lovers will also find themselves in paradise, as the region is famed for its vineyards and wine tours that offer a taste of the local terroir. Open from June to October.
