Angelina Jolie’s hotel of choice when she’s in town, Phum Baitang is a five-star hideaway with serious celebrity credentials. On the outskirts of Siem Reap, the hotel is a fully immersive experience built around a ‘green village’ concept that integrates working rice paddies within its grounds. The 45 wooden villas – 25 of which have private plunge pools – are odes to rustic chic design: think muted linen furnishings, beamed ceilings and numerous soft spots to sink into for a nap. If you can drag yourself away from all that, head to the 50m outdoor infinity pool which boasts spectacular views across the 8-acre property. The nearby pool bar serves up light meals to peckish sun-seekers, while the Cigar Lounge’s colonialist-inspired decor begs guests to sit down with a gin and tonic at sunset.

With the charming, once sleepy, Siem Reap now bulging at the seams, the timing could not be better for a hotel to open outside town, in the tranquil Cambodian countryside, yet still within easy reach of the temples that draw the crowds.
