The fortified town of Langres is located between Dijon and Nancy, and makes a perfect stop-over location on a drive through this scenic stretch of countryside, heading towards the South of France. Le Cheval Blanc's unfussy interior décor allow the building's history to do most of the talking; stone arched windows dating back to the 12th Century are a reminder of the former abbey that stood on the same site. The gourmet restaurant, headed by chef Patrick Durdan, offers all manner of contemporary takes on French cuisine. Expect exceedingly fresh ingredients and deconstructed desserts. Enjoy a glass of Burgundy wine on the terrace to complete the experience.

Close to one of its grand stone gates is the welcoming Le Cheval Blanc, in a former abbey. Many of the 23 rooms (10 in an adjoining building) feature ancient stone arched windows and some have vaulted ceilings, while the excellent Restaurant Diderot serves menus using fresh local produce.
